·     Bloody Mary: We might as well call this tasty favorite “brunch in a glass.” Our Bloody Marys are served with a homemade Bloody Mary mix, Absolut vodka, and tasty boiled shrimp as garnish.

 

·     Frozen Margarita: At Tricky Fish, we skip the syrupy store bought mixes and create our own with freshly squeezed lime juice. No high fructose corn syrup here! Round it out with Sauza blue tequila and you’ve got a drink as refreshing as it is ice cold.

 

·     Manhattan: A classic cocktail dating back to the 1870s, our Manhattan mimics the flavors that made the original great. Think Bulleit Rye, blood orange bitters, and vermouth – all rolled in to a cocktail that is simply perfect.  

 

·     Cinnamon Apple Julep: Just in time for Fall, our Cinnamon Apple Julep is infused with the flavors of the season. At Tricky Fish, we take classic Jim Beam, then infuse it with flavors of baked apple and cinnamon to create a unique bourbon all its own. Add a little homemade cinnamon syrup and fresh mint, and you’ve got a cocktail worth raving about!

What to Look for in a Muffaletta - Tricky Fish

As a restaurant built on the inspirations of the gulf coast, tastes and influences of New Orleans permeate into the food we serve here at Tricky Fish. One New Orleans favorite that has quickly become a hit at Tricky Fish is the humble muffaletta. But what makes a muffaletta fabulous?

 

1.   The Bread

 

A great sandwich starts with the bread, and you can’t dismiss the perfection of muffaletta bread. It’s a round loaf that is flattened on top. The texture of a good muffaletta loaf will remind you a sponge: soft, fluffy insides with a firm exterior. At Tricky Fish, we use a fresh Gambino bun – straight from New Orleans for an authentic flavor every time.

 

2.   The Olive Spread

 

What separates a good muffaletta from a great muffaletta is the olive spread. Again, we love Gambino’s olive salad from New Orleans, because they use only the finest ingredients from around the world. Ripe, green olives sourced from Sicily and Spain, other vegetables sourced from fertile regions of California, and 100% extra virgin olive oil from Sicily are just a few of the ingredients that set their spread above the rest with a difference you can taste.

 

3.   The Fixins

 

Don’t skimp on the meats and cheeses! We love to load our Tricky Fish muffalettas up with high quality, aged provolone, cured hams, and salamis. The higher quality the meat, the better it will taste.

 

4.   The Prep Time

 

The best muffalettas are made at least 2 hours in advance, allowing the oils and flavors to seep into the dense bread. Trust us on this; it’s a little tip we learned from the founder of the original muffaletta, Central Grocery in New Orleans, LA.

Tricky Fish Gives Back: ONEHOPE Winery

At Tricky Fish, we like to keep things simple. We enjoy the simple pleasures in life and love when those simple pleasures align with our goals to give back and support great causes.

 

When we were opening our Richardson restaurant and bar, we looked long and hard at which wines, spirits, and craft beers we wanted to carry. One such winery stood out, and we just had to carry their wines in-house: ONEHOPE Winery.

 

What is Different about ONEHOPE?

 

ONEHOPE is wine with a purpose. As a relatively new winery tucked into the heart of Napa Valley, ONEHOPE Vineyard is an example of how to run a sustainable, for-profit business. It started as just 8 20-somethings, anxious to make a difference, while making great wine. At a trade show, a man named Michael (who they later learned was Michael Mondavi himself!) took an interest in their company and has been a consultant on the business every since. ONEHOPE’s Vineyard is already a leader in water and energy conservation within the Napa Valley.  

 

Beyond the sustainability aspect of the business, each bottle of ONEHOPE wine that is sold gives back to a certain charity. Causes like fighting childhood hunger, breast cancer research, providing therapies for autistic children, pet adoption, creating clean drinking water in third world counties, and so much more. Gift Idea: Savory Bacon Jam

The season of parties and holiday giving is almost upon us, and sometimes it can be difficult to know what to get everyone on your list. And then there are always the last-minute gifts when you wish you had something on hand.

 

Tricky Fish – the best new restaurant in Richardson, Texas - has just the idea for you, straight from our kitchen to yours: Bacon Jam.

 

Bacon Jam is a simple spread for bread or sandwiches. We serve it on our Cheeseburgers and Fish Sandwich and have found it’s always a hit with its savory deliciousness and surprising versatility. The hostess who has everything will thank you for your thoughtful gift!

 

So how do I whip up a batch of Bacon Jam? Read on for Tricky’s Fish top secret recipe:

 

Ingredients

 

½ cup salad oil

1 ½ T. minced garlic

1 quart yellow onion, sliced into ¼” slices

4 lbs. sliced bacon

¾ cup dark molasses

1 1/3 cup dark brown sugar, packed

2 cups apple cider vinegar

 

Directions

 

1.   Preheat oven to 300 degrees and cook raw bacon on a parchment lined baking sheet for 12-15 minutes. Bacon can be overlapping; cook until cooked through but limp.

2.   Remove bacon from oven and lay out on a paper towel lined plate to cool.

3.   Once cooled, mince the bacon into 1/8 inch sized pieces.

4.   Heat oil in a sauté pan over medium heat. Add onions and garlic; cook until just translucent. Do not overcook.

5.   Reduce heat to lowest setting and gently fold in the remaining ingredients. Simmer for 10-12 minutes while mixture reduces, typically by 1/3.

6.   Remove from heat and cool for 10 minutes.

7.   Once cooled, pulse in a food processor for 30 seconds.

8.   Spread the finished jam out on a pan to cool. Once cooled completely, transfer to smaller containers for serving. Recipe makes about 70 servings.

D.G.S. stands for Darn Good Salad – and that’s just what it is! Be sure to order this delicious salad, loaded with grilled chicken, dried cranberries, spiced pecans, bleu cheese, onion, and croutons, all layered on a bed of Spring greens.

 

Sandwiches: Muffaletta

 

You don’t have to go all the way to New Orleans for a quality muffaletta. We have the best muffaletta in Dallas with gourmet Gambino bun, olive spread that will knock your socks off, ham, salami, and provolone.

Tricky Fish Brings in the Best: Jon Flaming

As a new restaurant in Richardson, Texas, Tricky Fish founders wanted artwork throughout the restaurant that is distinctive and true to our core. Tricky Fish is all about simplifying every aspect of your life to create moments to savor food and friends, and we wanted that to come across in the artwork.

After an extensive search, we found the obvious choice: Jon Flaming. A true Dallas visionary, Flaming understood our brand image and came through with some stellar artwork for the restaurant, menus, and more.

About Jon Flaming

Although born in Wichita, Kansas in 1962, it’s almost fate that his family moved to Texas just 6 years later. From there, Jon began to take on his southern roots, attending school at Texas State University and then opening Jon Flaming Design in 1993. His work focused on iconic Texas imagery, including collections for the Grace Museum in Abilene, Tyler Museum of Art in Tyler, and Budweiser Silver Eagle Collection in Houston. Each piece of art he did seemed to convey Texas history and culture in a new, unexpected way.

The advertising industry began to take notice, and consequently, Flaming has designed for dozens of companies over the years including American Airlines, FedEx, The John Wayne Cancer Foundation, Kellogg’s, Pepsi, Neiman Marcus, and so many more. Jon’s award-winning art has been published in many design publications including Graphis and Communications Arts.
