Legend has it the po’boy was originated as a “meal” given to “poor boys” who were on strike from the railroad, and one of the original draws was that it was a complete meal in a compact, handheld package. And even today, what’s not to love about meat, cheese, veggies, and bread all rolled into a perfectly delicious package?! We serve ours with lettuce, tomato, onion, pickles, and sauce with fries or slaw on the side.

Our roots are southern, and we take old recipes from Louisiana – many with Cajun and Creole roots – and give them a new twist. For example, you probably wouldn’t find bacon jam on the original fried oyster po’boys of New Orleans, but it’s a fantastic addition to our Fried Oyster B.L.T. po’boy.
